Overview

Schiava, affectionately known as the “cotton candy wine,” originates from the Trentino-Alto Adige region of Northeast Italy and is also called “Trollinger” in Germany. It is a fun and approachable wine known for its sweet aromas and bubblegum-like flavors. Similar in body style to Pinot Noir, Schiava can be traced to at least the 13th century.

This grape produces a dry red wine with a light body. It has medium to high acidity, low to medium alcohol and low tannins. The primary flavors are ripe strawberry, cherry, pomegranate, cranberry, red plum, raspberry, cotton candy, bubblegum, potpourri, violet, and nuts.

Food Pairings

Schiava pairs well with semi-sweet meats like lemon chicken, ham, salami, and dishes with BBQ sauce. It also compliments light fish, shrimp, and southwest Asian cuisines with ginger and basil. As for appetizers, it is often enjoyed alongside Bruschetta, olives, mushrooms and Pecorino cheeses.
